L'idée du week-end : gâteau marbré... Ce n'est pas que pour les enfants !

















Le meilleur des goûters c'est bien sûr un morceau de pain croustillant, une lichette de beurre et du chocolat. Mais parfois c'est aussi un bon gâteau et le marbré fait partie de ces musts inoubliables. Et même si on est devenu un peu plus grand, ce n'est pas que pour les enfants...

Pour le changer des arômes habituels de la vanille et renforcer la saveur de l'amande, j'y ai râpé une fève tonka dans la pâte. Tout aussi bon que l'original, ce gâteau révèle néanmoins une saveur très subtile et agréable. Et pour accompagner ce goûter, on boit quoi ? Un chocolat, pardi !

Gâteau marbré... Ce n'est pas que pour les enfants !
Pour 8 personnes (recette tirée du livre les arômes du chocolat de Stéphan Lagorce)

200 g de sucre en poudre
350 g de farine + 1 cuillère à soupe pour le moule
4 oeufs
200 g de beurre doux très ramolli + 2 noisettes pour le moule
40 g d'amandes en poudre (recette originale : 80 g)
120 g de crème liquide
1 sachet de levure chimique
3 cuillères à soupe de cacao amer type Van Houten
1 fève tonka
1 poignée d'amandes effilées

Préparation.
Placer le moule pendant 1/2 heure environ dans le réfrigérateur. Préparer la pâte en mélangeant le sucre et les oeufs. Ajouter ensuite la farine, le beurre coupé en petits cubes, les amandes en poudre, la fève tonka râpée, la crème liquide et le sachet de levure chimique. Bien fouetter le tout, pour ma part, j'ai réalisé la pâte au robot. Il faut obtenir une pâte sans grumeaux.

Finition et cuisson.
Sortir le moule du réfrigérateur, le beurrer et le fariner. Verser la moitié de la pâte dans le moule. Incorporer le cacao amer dans la pâte restante et bien mélanger. Verser dans le moule. Parsemer d'amandes effilées et enfourner dans un four préchauffé à 160°c pendant 50 minutes. Le gâteau est cuit lorsque la lame du couteau ressort sèche de la pâte. Démouler lorsqu'il est tiède.

Soes Cake Recipe Ingredients for skin:

· 75 grams flour
· 75 grams butter
· 150cc water
· 3 egg yolks
· 2 items egg white

Ingredients for filling:
· 2 ¼ tbsp Custard powder
· 4 tablespoons granulated sugar

· 250cc liquid milk
· 1 teaspoon butter
· ½ tbsp Rum

Method Cake Recipe:
· Melt butter with water for 3 ½ minutes with high power.
· After liquid and boil, put the flour. Stir quickly for the average. Set aside.
· After the dough is rather cold, put the eggs one at a time, stirring frequently, for average.
· Preheat oven to 200 ° C.
· disemprit dough on top of mold that has been buttered.
· Bake for 20 minutes.

Method:
· Mix custard powder with sugar. Add milk gradually, stirring constantly, for flat and sugar dissolves.
· Cook for 3 minutes on medium power. Mix well. Brown for 1 minute longer with medium power.
· Leave the butter and rum. Mix well.
· After a little cool, fill into the cake Soes.

· Close again, wait until cooked for about 5 minutes. Remove from mold and ready to serve.
